This is a great healthy lasagna reipe!

Recipe Ingredients:
1 pound of lean ground beef (either 93% lean or leaner)
1 box whole wheat uncooked lasagna noodles (No need to boil the noodles because they will cook in the oven)
1 28 oz can crushed tomatoes
1 14 oz can crushed tomatoes
1 onion, chopped
3 garlic cloves, chopped
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried basil
1 1/2 cups chopped fresh mushrooms
2 cups part skim ricotta cheese
1/4 cup parmesan cheese
2/3 cup reduced fat mozzarella cheese
1 egg
2 cups fresh chopped spinach
Directions:
1. Preheat oven to 375 degrees. Cook the ground beef in a saute pan sprayed with cooking spray until fully cooked (about 6 minutes). Then add mushrooms and cook for another 5 minutes and season with a pinch of salt and pepper.
2. In another saute pan sprayed with cooking spray cook the onion and garlic for 5 minutes or until soft. Then add the crushed tomatoes, basil, oregano, and a pinch of salt and pepper.
3. Then add 2 cups of the marinara sauce to the meat/mushroom mixture. Set the other 2 cups of remaining marinara aside.
4. In a large bowl combine ricotta, spinach, and an egg.
5. In a 9x13 baking dish spread 1 cup of marinara. Then add 3 uncooked noodles (so they are touching but not overlapping)
6. Cover with foil and bake for 45 minutes. Then remove the foil and bake for an additional 15 minutes or until cheese becomes golden brown.
***Tip: If you prefer store bought marinara then skip step 2 and use 4 cups of storebought marinara.***
