Flourless Marzipan Cookies - Gluten-Free

2/3 cup ground walnuts
2/3 cup ground blanched almonds
2/3 cup confectioners' sugar
1 1/2 teaspoons almond extract -- the real stuff
1 large egg white
Preheat your oven to 350 degrees Fahrenheit, and line cookie sheets with
parchment paper.
Mix all ingredients together on low speed for about 3 minutes.
Drop this mixture by teaspoonfuls on prepared cookie sheets, spacing at
least an inch apart.
Bake for about 15 minutes or until cookies are golden. Transfer them to
wire racks to cool. This recipe makes about 3 dozens cookies.
Makes around 3 dozen cookies
Tip on grating lemon zest - I cover the grater with a piece of plastic so
that the zest stays on the plastic wrap. It is easy to remove the zest
from the grater later.
