Gourmet Grape Sorbet

6 cups seedless green grapes -- about 2 1/4 pounds, chilled
3/4 cup superfine sugar
1/4 cup fresh lemon juice
Special Equipment: -- an ice cream maker
Combine all ingredients in a blender and puree until smooth, about 3 minutes. Strain through a fine-mesh sieve into a bowl, pressing on solids; discard solids. Refrigerate, covered, until very cold, 6 to 8 hours.
Freeze sorbet in ice cream maker. Transfer to an airtight container and put in freezer to harden for at least 1 hour.
The sorbet keeps for up to 1 week.
Makes 1 quart (8 one-half cup servings).
AuthorNote: Almost any kind of seedless grape will work for this refreshing sorbet, which tastes of pure grape essence. Keep it in mind as a delightful intermezzo or a light ending to an autumn meal. If you're feeling ambitious, make a few batches, each with a different kind of grape - the color combination will be outrageously gorgeous.
