3 boneless skinless chicken breasts
2 tsp olive oil
1/4 cup balsamic vinegar
1/2 cup lower sodium chicken broth
1 tsp minced garlic
1/4 cup chopped fresh oregano
1/4 tsp salt
1/2 tsp freshly ground black pepper
Fresh basil -- optional
Brush the chicken breasts with the olive oil and place in a slow cooker
that has been sprayed with cooking spray. Combine the rest of the
ingredients in bowl and pour over chicken. Cover and cook on low for 6-8
hours until cooked through. Sprinkle with fresh basil before serving, and
serve over a bed of couscous or on top of a salad.
