Haven't tried these with sugar substitute yet, but I have cut the butter back to 1/2 cup with no problem. Going to try it with applesauce or prune sauce next.

Tea Cakes

1 cup all purpose flour
1/2 cup sugar
1 medium egg
1/3 cup butter
1 tsp vanilla extract
1 tsp baking powder
In a mixing bowl, cream butter and sugar.
Add eggs, one at a time, beating well after each addition.
Beat in vanilla.
Combine flour, baking powder and salt; gradually add to the creamed
mixture (the dough will be soft).
Drop by teaspoonfuls 2" apart on to greased baking sheets.
Bake at 375 °F (190 °C) for 7-8 minutes or until the edges are golden
brown.
Remove to wire racks to cool.
Makes 15 tea cakes (dollar pancake-size)
Prep time: 15 mins
Cook time: 8 mins
