Farmers Almanac Peanut Sauce

1 cup unsweetened chunky peanut butter
3 tablespoons tamari -- or soy sauce
2 tablespoons sugar
8 cloves garlic
1 tablespoon hot chili oil -- optional
1 cup chopped fresh cilantro
In a blender or food processor, combine all of the ingredients except the cilantro, add 2 tablespoons of water, and blend until smooth.
Remove from the blender and fold in the cilantro. (If you process the cilantro, the sauce will turn an odd shade of green.)
Makes about 2 cups
Make Ahead: This peanut sauce keeps for months in an airtight container in the refrigerator. To use, dilute to the desired consistency with near-boiling-water, add 1/2 teaspoon at a time and stirring.
