Basic Tomato Sauce - Detox

2 tablespoons extra-virgin olive oil
4 garlic cloves -- minced
1 Pinch crushed red pepper -- (optional)
1 medium yellow onion -- diced
1 medium carrot -- diced
28 ounce canned peeled whole tomatoes -- 1 can
1 tablespoon dried oregano
2 bay leaves
Salt and pepper to taste
Heat the oil in a large saucepan. Add the garlic nd the crushed red pepper
and saute for minute until the oil is fragrant.
Add the onion and carrot and cook until the vegetables are soft (about 8
minutes).
Add the tomatoes and dried herbs and bring to a boil. stirring often.
Lower the heat and simmer for 20 minutes.
Break up the tomatoes with a fork or masher and simmer for an additional
10 minutes. Season with salt and pepper as desired.
MAKES 1 QUART
Adding carrots sweetens the sauce, so you can skip the sugar that is found
in most tomato sauce recipes. If you don't like the mouthfeel of diced
carrot and prefer a smoother texture, you can grate the carrot instead of
dicing it. I prefer a chunkier, more rustic texture.
