Cappuccino Granita

2 cups hot espresso
2/3 cup sugar -- or to taste
1/2 cup evaporated skim milk
1/2 teaspoon ground cinnamon
Combine the coffee and sugar in a mixing bowl and whisk until the sugar is
completely dissolved. Stir in the evaporated milk and cinnamon. Taste the
mixture for sweetness, adding sugar as desired. Let the mixture cool to
room temperature, then refrigerate it until cold.
Freeze the mixture in an ice-cream machine, following the manufacturer's
instructions. For best results, serve at once.

AuthorNote: Granitas are the simplest and most refreshing of all frozen
desserts. The traditional method calls for the mixture to be frozen in a
bowl, being scraped with a fork as it freezes to separate it into loose
ice crystals. The advantage of this method is that it requires no special
equipment. But I also like the smooth, creamy consistency achieved by
using an ice-cream machine.
If you don't have an ice-cream machine, place the granita in a shallow
bowl in the freezer. Scrape the mixture with a fork three or four times as
it freezes to break it into icy crystals. Scrape it again just before
serving to loosen the crystals.
