3 tablespoons no-fat sour cream
4 teaspoons red wine vinegar -- to 5 teaspoons
1/2 teaspoon sugar -- or honey (optional)
salt and freshly ground black pepper
3 cups thinly shredded savoy cabbage -- or green cabbage (1/3 whole cabbage)
1/2 small red onion -- thinly sliced lengthwise
1 tablespoon poppy seeds
1 tablespoon chopped fresh dill
In a salad bowl or large mixing bowl, whisk together the sour cream,
vinegar, sugar, salt, and pepper. Stir in the cabbage, onion, poppy seeds,
and dill. Correct the seasoning, adding salt, vinegar, or sugar to taste.
Makes 3 cups, serving 4 to 6.
AuthorNote: This slaw takes advantage of the new no-fat sour creams to
create a creamy but healthful dressing. Poppy seeds, onion, and fresh dill
are typical Eastern European flavorings.
