Miso Barbecue Sauce

1/3 cup cider vinegar
1/3 cup ketchup
2 tablespoons tomato paste
2 tablespoons brown sugar
1 tablespoon molasses
2 teaspoons hot pepper sauce -- or vegetarian Worcestershire-style sauce
2 cloves garlic -- minced
1 teaspoon minced fresh ginger
2 drops Liquid Smoke flavoring -- a few drops or to taste
2 tablespoons miso -- preferably red miso
Combine the vinegar, ketchup, tomato paste, brown sugar, molasses, hot
sauce, garlic, ginger, and Liquid Smoke in a saucepan and simmer for 3
minutes, whisking well. Let the sauce cool slightly.
Puree the sauce in a food processor or blender adding the miso. Correct
the seasoning, adding vinegar, brown sugar, miso, or Liquid Smoke to
taste. Store in the refrigerator.
Makes 1 1/2 cups (serves 6 one-quarter cup servings)
AuthorNote: Miso (fermented soybean paste), lends this barbecue sauce a
lively and complex flavor. I like to serve it with veggie burgers and
smoked tofu.
