Sweet Brown Bread
  
  I made this yesterday and love it. I did switch out the whole-wheat flour for Rye flour; I also used an egg substitute and Splenda brown sugar. I'm not sure how much of a nutritional difference this would make.
  
  1-1/4 cups whole-wheat flour
  1 teaspoon baking powder
  1 teaspoon grated orange or lemon zest
  ½ teaspoon baking soda
  ½ teaspoon cinnamon
  1/8 teaspoon salt
  ½ cup low-fat buttermilk
  1 large egg
  3 tablespoons molasses
  2 tablespoons packed dark brown sugar
  Preheat oven to 375; spray an 8 x 5 inch loaf pan with nonstick spray.
  
  In a medium bowl, combine the flour, baking powder, orange zest, baking soda, cinnamon, and salt. In another bowl, combine the buttermilk, egg, mo9lasses, and brown sugar. Pour over the flour mixture, mixing quickly to blend (do not over mix).
  
  Transfer to the pan. Bake until a toothpick inserted in the center comes out clean, 35 to 40 minutes. Cool completely on a rack.
  
  Makes 12 servings-1/12 of the loaf per serving
