Master Pudding Mix

1 cup cornstarch
1 teaspoon salt
3 3/4 cups sugar -- or equivalent sugar substitute

Mix all the ingredients together and keep in a covered container in the pantry labeled with the name "pudding base" and date

Makes 6 puddings.
Shelf Life: 1 year.

VANILLA PUDDING
3/4 cup Master Pudding Mix
2 1/2 cups milk
2 egg yolks, slightly beaten
1 teaspoon vanilla

In a medium saucepan, add the dry pudding mix and 1/2 cup of the milk measurement. Cook over medium-heat, stirring constantly. Continue adding the balance of the milk until completely blended. Add egg yolks and continue stirring as you bring to a boil; boil for one minute (still stirring). Remove from heat and stir in vanilla (or your choice of flavoring). Pour into dessert dishes or one large bowl and place in the refrigerator to set up.
Makes approx. 4 to 6 servings (Yields approx. 3 to 3 1/4 cups)
Shelf Life: 5 days in the refrigerator.

AuthorNote: If you want to change the flavor, add 1 to 2 teaspoons of desired flavored extract. For chocolate pudding, add 1 to 2 tablespoons of unsweetened cocoa powder (or to taste).

5 cups all-purpose (plain) flour -- or combination whole-wheat and all-purpose flour
1 tablespoon baking powder
7 1/2 cups sugar -- or equivalent sugar substitute
1 tablespoon salt
7 ounces unsweetened cocoa powder

Combine all ingredients and mix until thoroughly blended. Store in an airtight container labeled with name and date. Keep in a cool, dry place.

Yields: 12 cups (2 cups mix makes 10-12 brownies).
Shelf Life: 3 to 4 months.

AuthorNote: For a healthier brownie, use half whole-wheat flour and half all-purpose flour. The brownies will be a heavier texture because of the density of whole-wheat flour, but they will taste just as good.

CHOCOLATE BROWNIES
2 cups Master Brownie mix
1/4 cup milk, reduced-fat milk is fine
2 eggs, beaten
1 teaspoon vanilla extract
Optional: 1/4 cup chopped nuts

Preheat oven to 350F.
Grease and lightly flour a 9x9" baking pan. Beat all the ingredients together until well blended. Pour into pan and bake 25 to 30 minutes or until inserted toothpick (test from center of pan) comes out clean.
Makes approx. 10 to 12 brownies.
Shelf Life: 3 to 4 days.

Maple Syrup or Simple Brown-Sugar Syrup

2 1/3 cups water
5 cups brown sugar
1 tablespoon maple extract

In a glass or stainless steel pot, bring the water to a rapid boil Pour in the sugar and stir until it is completely dissolved; remove from heat. Stir for 3 to 5 minutes to reduce temperature. Add your flavoring and stir just enough to distribute. Finish cooling the new syrup and then pour into a jar labeled with name and date.

Yields 7 1/3 cups (22 one-third cup servings)
Shelf Life: 6 to 8 months in refrigerator

Note: Extracts and flavorings are easily damaged by heat. Do not add your extract or flavoring until you remove the syrup from the heat and it has cooled.

Maple Grove Maple Syrup: $16.95 for 16 ounces

AuthorNote: making syrup is produced through rendering a sugar and flavor combination in boiling water until it thickens. Fresh maple syrup is the best, but unless you have a maple tree in your backyard or back forty, you will need to start with a flavoring. This recipe will give you homemade maple syrup. To make southern-style brown-sugar syrup, omit the one tablespoon maple extract and replace with one teaspoon vanilla extract (you mainly want the flavor of the brown sugar).

Yields: approx. 3 cups (48 one-tablespoon servings)

FRIENDSHIP TEA
2 to 3 teaspoons Dry Master Friendship Mix
6 to 8 ounces water

Heat your water to a boil and add tea mix. Adjust the tea to water ratio to suit your taste.

(Weight-Watchers-Recipes) Mustard Mashed Potatoes

 

4 dups cubed peeled Yukon Gold potato
1 Garlic clove, sliced
1/3 cup 1% low-fat milk
1/4 cup stone-ground mustard
1 TBSP butter
1/2 tsp salt
1/4 tsp black pepper

Place potato and garlic in a medium saucepan; add water to cover. Bring to a boil; cover, reduce heat, and simmer 20 minutus or until tender Drain; return potato mixture to pan. Add milk and remaining ingredients mash with a potato masher.

Yields: 8 servings

(Weight-Watchers-Recipes) Chicken N Rice Casserole

 

This is my own version

1 cup brown rice (cal 300 fat 3 fib 4)
1/3cup shredded cheese (cal 110 fat 9 fib 0)
3 drum sticks chicken (cal 540 fat 30 fib 0)
1cup 1%milk (cal 110 fat 2.5 fib 0)

TOTAL
cal 1040
fat 44.5
fib 4

In a 5x9 pan put rice and milk, then lay the chicken in and sprinkle the cheese on top (I like to put chicken seasoning on the chicken to give it more flavor) cover with tin foil put in oven at 350 for 1 hour.

makes 3 serving

Mix all the ingredients together by hand or with a food processor until thoroughly blended. Store in a tight-fitting container labeled with name and date.

Yields: approx. 1 1/2 cups (makes 72 one-teaspoon servings)

HOT MULLED CIDER
1/2 to 1 teaspoon Dry Master Hot Cider Mix
1 cup hot apple cider

Place hot apple cider in a cup. Add cider mix. Stir and enjoy!
Yields: 1 serving
Add a cinnamon stick for stirring and a little extra spice

(Weight-Watchers-Recipes) Orange Delight

Orange Delight

1 pkg. fruit flavored
jello, dry (4 serving size) -I use the sugar free
1 (12 oz.) pkg. cottage cheese - use low fat or fat free
1 can
drained pineapple chunks or mandarin orange slices -in light syrup
1 lg. container
Cool Whip - use sugar free, light or fat free

Mix together ingredients and put in mold or dessert dishes. Place in refrigerator
overnight or 24 hours. Taste is improved by refrigeration. Serve on
lettuce if desired for salad.
