Basic Cheese Sauce

Amount Measure Ingredient -- Preparation Method

1/2 cup butter -- (1 stick)
7 tablespoons whole-wheat flour
3 cups milk
1/2 cup water
2 cups shredded cheese -- cheddar, Monterey Jack, Colby, cheese blends, etc.

In a saucepan, melt butter over medium heat. Add flour and stir until blended (it will be thick). Add the milk and water and continue cooking, stirring constantly, until the sauce turns smooth. Slowly add the cheese a little at a time, stirring each time until smooth (this will happen quickly). Keep on medium heat and do not allow it to boil. Salt and pepper to taste. If the cheese sauce is a little too thick, add a small amount of water and stir until well blended. If you want it thicker, add a small amount of flour and stir. Pour into a container and label with name and date.

Yields: 5 1/4 cups (21 one-quarter cup servings).
Shelf Life: 2 weeks in refrigerator.

AuthorNote; Cook up your own choice of pasta and then whip up this homemade cheese sauce at a moment's notice. Choose the cheese of your choice. Most varieties will work, including, cheddar, Monterey Jack, Colby, cheese blends, etc. If you go through a lot of cheese, look up "dried cheese powder" on the Internet. You will find stores that sell tins of powdered cheese; all you add is water. The dried cheese powder may seem expensive, but remember, it is a concentrated powder - a little goes a long way. If you want your sauce really delectable, replace the milk with heavy cream!
