* 5 tablespoons of potato flour
* 4 tablespoons of butter
* 6 tablespoons of sour cream
* salt
* pepper

Method :

1. Pour boiling water over the mushrooms and let them stand for a few
minutes.
2. Then boil them in the stock till tender, remove when done, chop,
and return to the stock.
3. Melt the butter in a small saucepan, stir in the flour, without
browning, moisten with a few tablespoons of hot stock, and stir into the
soup.
4. Just before serving, add the sour cream.
5. Nouilles are sometimes served with this typically Polish soup.

(Weight-Watchers-Recipes) Skillet Pork Chops Florentine (4 Points)

 

Just released today from Campbell's Kitchen. Modifications to remove
unnecessary points by Jim Trebilcox.

The original recipe called for 2 tablespoons of olive oil to brown the
pork chops in and to sautè the onions. These have been replaced. The
original recipe left the fat on the pork chops, removing the fat lowers
the points. 204 Calories and 6 grams of fat each serving. Fantastic!

Skillet Pork Chops Florentine (4 Points)

1 1/2 pounds Pork chops, lean only -- boneless, 6 at 3/4-inch
thick
1 medium Onion -- thinly sliced (about 1/2 cup)
24 ounces Prego® Marinara Italian Sauce
10 ounces Frozen spinach -- thawed and well drained
4 ounces Part skim milk mozzarella cheese -- shredded
(about 1 cup)

Cook the pork chops on a griller until the chops are well browned on
both sides.

Remove the pork chops and set them aside.

Spray a nonstick skillet with a spray release. Add the onion. Cook and
stir until the onion is tender-crisp.

Stir the sauce and spinach into the skillet and heat to a boil.

Return the pork chops to the skillet and reduce the heat to low.

Cover and cook until the chops are cooked through.

Sprinkle with the cheese.

1 cup dried black beans -- or 2 cans, drained and rinsed
1 pound boneless skinless chicken breast pieces
4 cups chicken broth
16 ounces prepared salsa -- (1 jar)
1 cup frozen corn
1 cup sliced mushrooms
1 1/2 teaspoons ground cumin
1/2 cup low fat sour cream
To garnish: -- (optional) shredded cheddar cheese, avocado slices, fresh cilantro

Use a 4-quart slow cooker.

If you're using dry beans, soak them overnight. Drain and rinse the beans, and put them into the stoneware.

Add the chicken, broth, and salsa, then add the corn, mushrooms, and cumin.

Cover and cook on low for 8 to 10 hours, or high for 5 to 6 hours.

If you'd like to thicken the broth (I did!), you can use an immersion blender (I love the thing!) to blend a bit of the beans and chicken. If you don't have one, scoop out 2 cups of the soup and carefully blend in a traditional blender. Stir the mixture back into the soup.

Mix in sour cream before serving, and garnish with shredded cheese, avocado slices, and cilantro if desired.

Makes 6 servings

Peanut Chicken Penne Recipe - 8 Points per serving, 367 calories

Recipe Ingredients:

1 pound whole wheat penne pasta
1 1/2 pounds boneless, skinless chicken breasts (chopped into 1 inch chunks)
1/4 teaspoon ground ginger
1/4 teaspoon garlic powder
3 garlic cloves, chopped
1/4 cup reduced fat peanut butter
1/4 cup soy sauce, reduced sodium
1/2 cup chicken stock, reduced sodium
1 teaspoon sesame oil
1 teaspoon, Asian chili sauce
1/4 cup frozen peas

Directions:

1. In a large pot of boiling salted water cook penne for 8-9 minutes then drain and set aside.
2. In a skillet sprayed with cooking spray cook the chicken over high heat for 6-7 minutes or until fully cooked. Season chicken with salt, pepper, and garlic powder. Then remove chicken and set aside on a plate.
3. Spray more cooking spray in the skillet and cook the garlic for 2-3 minutes. Then add the ginger, peanut butter, soy sauce, sesame oil, chicken stock, and chili sauce and whisk all ingredients together. Let the sauce simmer for 2-3 minutes and then add the chicken back in and the peas.
4. Serve the chicken and peanut sauce over whole wheat penne.

(Weight-Watchers-Recipes) Zippy 3-Bean Chili

 

I got this recipe from a magazine, but changed it a little bit.
 
1 pound lean ground beef (I use venison)
1/2 c chopped onion
1/2 c chopped green bell pepper
1/2 c chopped red bell pepper
1 garlic clove, minced
2 c water
1 c (14 1/2 oz) diced tomatoes and green chilies, undrained
1 envelope reduced-sodium taco seasoning
1 can (15 1/2 oz) great northern beans, rinsed and drained
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) pinto beans, rinsed and drained
8 Tbsp shredded reduced-fat cheddar cheese, divided
 
In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain.  Add peppers and garlic; cook and stir 3 minutes longer or until vegetables are almost tender.  Stir in the water, tomatoes and taco seasoning.  Bring to a boil.  Reduce heat; simmer, uncovered, for 30 minutes.  Add beans; simmer 30 minutes longer.  Sprinkle each serving with 1 Tbsp cheese.
 
Per Serving (1 cup chili with 1 Tbsp cheese):  269 calories, 6g fat, 8g fiber (5 points)
