Amount Measure Ingredient -- Preparation Method
 -------- ------------ ------------
   8 ounces light cream cheese
1/4 cup plain yogurt -- nonfat or lowfat
   4 ounces smoked salmon
1 1/2 tablespoons fresh lemon juice
1 1/2 tablespoons chopped fresh flat leaf parsley
   1 tablespoon chopped fresh dill
   1 teaspoon prepared horseradish
2 tablespoons finely chopped red onion
                         freshly ground pepper

Place the cream cheese, yogurt, salmon, lemon juice, 1 tablespoon of the parsley, the dill and the horseradish into the bowl of a food processor and blend until well incorporated and the spread is just starting to smooth out. Using a spatula, fold in the onion and the remaining 1/2 tablespoon of parsley. Season with pepper.

Makes about 2 cups (8 one-quarter cup servings).

Whether for a family brunch or an evening soiree, smoked salmon is always a sure bet. This spread marries the smoky-salty flavor of the fish with a natural partner, dill, and then gets a lift from the horseradish and lemon.

 SERVING SUGGESTIONS:
 1. Serve with crackers, celery, or small triangles of rye bread.
 2. Smear thick layers on toasted bagels.
 3. Add to scrambled eggs or an omelet.
 4. Scoop out cherry tomatoes or cooked small red potatoes and fill with the salmon spread; garnish with chopped dill.
 5. Make tea sandwiches with thinly sliced cucumber and the spread.
