 Piquant Green Olive Sauce - 1g Carbohydrate; trace Dietary Fiber

      1/2           cup  green olives -- pitted
   2        tablespoons  capers
   2        tablespoons  canned chopped mild green chiles
   1                     green onion -- chopped
   1         tablespoon  chopped fresh parsley
   3        tablespoons  olive oil
      1/2           cup  water
                         salt and freshly ground pepper to taste
 
 In a blender or food processor, combine the olives, capers, chiles, green onion, parsley, and olive oil and process until smooth. Add the water, a little at a time, until you have a smooth sauce. Season with salt and pepper to taste.
 
 Serve at room temperature. If not using right away, transfer to a bowl, cover, and refrigerate until needed. Properly stored, the sauce will keep for 2 to 3 days.
 
 Makes 1 3/4 cups (7 one-quarter cup servings).
 
 This versatile and vibrant sauce is wonderful over steamed or roasted vegetables - try it with cauliflower. It's also great on baked potatoes and can be used to dress salads or slice raw tomatoes.
