1 tablespoon olive oil
1 cup diced sweet onion -- such as Vidalia
3 tablespoons balsamic vinegar
1/2 cup sour cream, light -- or regular, as preferred
4 ounces cream cheese -- softened
1/2 teaspoon garlic powder -- or granulated
salt and freshly ground pepper to taste
Heat the oil over medium heat. Saute the onion until translucent and lightly browned. Remove from the heat and add the vinegar to the pan. In a medium bowl, combine the sour cream, cream cheese, and garlic, then fold in the onion mixture until well incorporated. Season generously with salt and pepper.
Makes about 1 1/2 cups (6 one-quarter cup servings).
This is like a refined, homemade version of the onion dips we used to see at every football party. Caramelizing the onion with balsamic vinegar adds a deep, malty flavor that really takes this to a new level.
SERVING SUGGESTIONS:
1. Set on a platter with thick-cut potato chips and/or crudites; for color, garnish with chives or parsley.
2. Use as a dip for steamed artichokes.
3. Heap onto baked potatoes.
4. Use as a condiment
