8 ounces light cream cheese -- or regular
10 ounces crabmeat -- to 12 ounces, fresh or canned
2 tablespoons light mayonnaise -- or regular
1 tablespoon chopped green onion -- white and green parts
2 1/2 tablespoons fresh lemon juice
1/2 cup finely diced celery
2 tablespoons cocktail sauce
10 drops hot sauce -- to 15 drops, such as Tapatio or Tabasco
1/4 teaspoon salt
freshly ground black pepper
Bring the cream cheese to room temperature or microwave until just soft. Drain the crab well, making sure to press out all the liquid. Place the cream cheese, crabmeat, mayonnaise, onion, lemon juice, celery, cocktail sauce, hot sauce, and salt in a bowl and season with pepper. Using a spatula, mix well until well incorporated.
Makes about 2 cups (8 one-quarter cup servings).
Seafood always seems to add elegance to a party. I keep a few cans of crabmeat on hand so that I can quickly make this recipe to dress up a last-minute event.
SERVING SUGGESTIONS:
1. Serve in endive leaves for a chilled appetizer.
2. Put in a bowl alongside butter crackers.
3. Fold into the center of an omelet.
4. Use on top of toasted English muffins with poached eggs.
