7 ounces medium or regular tofu -- or 8 ounces (do not use extra-firm)
1/3 cup tahini
3 tablespoons seasoned rice vinegar
juice of 1 lime
2 teaspoons peeled and grated fresh ginger
2 1/2 teaspoons soy sauce -- light or dark
1 tablespoon chopped green onions -- green only
Place the tofu, tahini, vinegar, lime juice, ginger, and soy sauce in the bowl of a food processor and blend until smooth. Using a spatula, fold in the green onion.
Makes about 1 1/2 cups (6 one-quarter cup servings).
What is tahini? It's a paste like peanut butter except it's made with sesame seeds. Sesame and ginger are perfect partners in this snappy spread. I like to scoop it up using celery sticks for a simple, protein-rich snack.
SERVING SUGGESTIONS:
1. Serve as a snack with celery sticks.
2. Toss with Asian rice noodles or wheat noodles and stir-fried vegetables.
3. Serve as a dip alongside sesame veggie satay; garnish with green onion or chives.
4. Swirl into rice and serve with a wedge of lime.
