Vegan Worcestershire Sauce - 4g Carbohydrate; trace Dietary Fiber

1/2 cup cider vinegar
1 tablespoon dark molasses
1 tablespoon dark brown sugar
2 tablespoons soy sauce
1 teaspoon ground kelp -- or dulse
1 teaspoon tamarind paste
1/2 teaspoon onion powder
1/2 teaspoon dry mustard
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon ground allspice
1/4 teaspoon ground cayenne pepper
Combine all the ingredients in a small saucepan and bring to a boil, then remove from the heat and allow to cool to room temperature.
Transfer to a jar or other container with a tight-fitting lid and store in the refrigerator. Properly stored, the sauce will keep for 1 month.
Makes 3/4 cup (12 one-tablespoon serving).
Traditional Worcestershire sauce contains anchovies and it therefore not vegan. A good commercial vegan Worcestershire sauce is The Wizard's brand, available online or in natural food stores. It's easy to make your own with this recipe that comes very close to the flavor of the original.
