Hearty and Healthy Farmer's Veggie Soup

Amount Measure Ingredient -- Preparation Method

2 cups chopped veggies -- (whatever is in season)
1 tablespoon butter -- or 1 tablespoon olive oil
1 cup uncooked rice -- or 2 cups dried noodles (brown, whole-grain or whole-wheat)
1 1/2 teaspoons Master Herb Seasoning Mix for Soup
3 cups water

Place all the ingredients in a large saucepan and cover. Heat on high and bring to a boil. Immediately educe heat and let simmer for 20 to 30 minutes.

Yields: 7 to 9 cups (serves 4 to 8).
Shelf Life: 5 days in the refrigerator; 90 days in the freezer.

AuthorNote: This vegetarian version of [favorite] Soup with Rice or Noodles uses all veggies and whole-wheat or whole grains. If you want to add protein, cook up pinto or other beans per the directions on the package. Add one cup of the cooked beans to the soup. You do not need to cook this soup for a long time; cook only until noodles or whole grains are tender.

MASTER HERB SEASONING MIX FOR SOUP
8 tablespoons dried parsley
2 tablespoons dried chives
1 tablespoon dried thyme, plus 1 teaspoon
1/2 teaspoon dried sage
1/2 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper

Mix together thoroughly. Store in jar or container labeled with name and date. Keep in a cool, dry place.

Yields 11 to 12 tablespoons (12 one-tablespoon servings).
Shelf Life: 1 year.
