1 cup cornstarch
1 teaspoon salt
3 3/4 cups sugar -- or equivalent sugar substitute
Mix all the ingredients together and keep in a covered container in the pantry labeled with the name "pudding base" and date
Makes 6 puddings.

VANILLA PUDDING
3/4 cup Master Pudding Mix
2 1/2 cups milk
2 egg yolks, slightly beaten
1 teaspoon vanilla
In a medium saucepan, add the dry pudding mix and 1/2 cup of the milk measurement. Cook over medium-heat, stirring constantly. Continue adding the balance of the milk until completely blended. Add egg yolks and continue stirring as you bring to a boil; boil for one minute (still stirring). Remove from heat and stir in vanilla (or your choice of flavoring). Pour into dessert dishes or one large bowl and place in the refrigerator to set up.
Makes approx. 4 to 6 servings (Yields approx. 3 to 3 1/4 cups)
Shelf Life: 5 days in the refrigerator.
AuthorNote: If you want to change the flavor, add 1 to 2 teaspoons of desired flavored extract. For chocolate pudding, add 1 to 2 tablespoons of unsweetened cocoa powder (or to taste).
