(Weight-Watchers-Recipes) Mustard Mashed Potatoes

 

4 dups cubed peeled Yukon Gold potato
1 Garlic clove, sliced
1/3 cup 1% low-fat milk
1/4 cup stone-ground mustard
1 TBSP butter
1/2 tsp salt
1/4 tsp black pepper

Place potato and garlic in a medium saucepan; add water to cover. Bring to a boil; cover, reduce heat, and simmer 20 minutus or until tender Drain; return potato mixture to pan. Add milk and remaining ingredients mash with a potato masher.

Yields: 8 servings
