Beany Butter Bean Pate

Amount Measure Ingredient -- Preparation Method

1 can butter beans -- (15 oz) rinsed and drained
1/2 lemon -- grated rind and juice, or to taste
1/2 garlic clove -- crushed, or to taste
1 tablespoon fresh mint -- finely chopped
1 tablespoon olive oil
1 tablespoon water -- (approx)
salt and freshly ground black pepper -- to taste
1 sprig mint -- to garnish
To serve: -- crackers or bread of your choice
1. Place the butter beans and lemon juice in a food processor and blend until smooth.
2. Add the rest of the ingredients, adjusting the amount of water to give a smooth pate. Season and spread onto your chosen bread. Add the mint to garnish. Also delicious with salad.
Serves 6-8 as starter
