2 cups plain Greek yogurt -- low-fat
4 fat scallions -- or 6 thin
1 green chili pepper -- seeded
1 garlic clove -- peeled
1/2 cucumber -- preferably English/hothouse, peeled and finely diced
3 tablespoons chopped fresh cilantro
3 tablespoons fresh mint -- OR 2 tablespoons each fresh cilantro and mint, plus 2 tablespoons dill
salt and freshly ground black pepper -- to taste
Tip the yogurt into a large mixing bowl and scissor in the scallions and the seeded chile, cutting both as finely as you can.
Now mince the garlic into the yogurt and add the diced cucumber and most of the chopped herbs, reserving a little to sprinkle on top later, before serving. Mix all the ingredients together.
Serves 4 to 6 (1/3 to 1/2 cup each)
ChupaNote: wonderful over baked potatoes or rice. Finish with a sprinkling of red pepper flakes.
