Slow Cooker Corned Beef and Cabbage - 4 pts

3/4 pound corned beef brisket
1 head green cabbage -- cut into wedges
2 carrots -- sliced
2 parsnips -- sliced
2 cups water
1 onion onion -- sliced
1 teaspoon yellow mustard seed
Trim excess fat off the brisket. Cut into 1-inch cubes.
Add the brisket and all of the remaining ingredients to a 4-quart slow cooker. cook on low for 10 hours.
Serves 6

AuthorNote: this slimmed-down version of corned beef and cabbage has more vegetables and slightly less meat but all of the flavor of the classic dish.
ChupaNote: I replaced the teaspoon of mustard seed with 1 T. pickling spices (yes, that is a tablespoon) and 1/2 teaspoon red pepper flakes. I also replaced half the water with sodium-free broth (vegetable this time. It was open in the fridge). Occasionally, I use a half head green cabbage and a half head red cabbage just for some more color.
