2 sprays olive oil cooking spray
3 medium onions -- (Vidalia, red and Spanish recommended), peeled and cut in half
1 Tbsp packed brown sugar
1 Tbsp balsamic vinegar
3/4 cup beef broth -- or to taste (depends on desired consistency)
1/2 tsp table salt -- or to taste
1/4 tsp freshly ground black pepper -- or to taste
Preheat oven to 375ºF. Coat a large roasting pan or cookie sheet with cooking spray.
Place onion halves, cut-side up, on prepared pan and coat with cooking spray; sprinkle with sugar and brush evenly with vinegar. Roast, turning once halfway through cooking, until onions are very tender, about 1 to 1 1/2 hours.
Working in batches, puree onions with broth in a blender or food processor; season with salt and pepper. Serve hot, warm or cold.
Yields about 1/3 cup per serving.
