                               Chai-Oat Cookies

    1                cup  oat flour
       1/2           cup  white beans -- drained (but NOT rinsed)
    1                     banana -- very ripe
       1/2      teaspoon  ground cinnamon
       1/2      teaspoon  ground ginger
       1/4      teaspoon  ground cloves
       1/4      teaspoon  garam masala
       1/4      teaspoon  salt
       1/4           cup  light brown sugar -- or raw sugar (optional)
       1/4           cup  instant oats, dry
                          To garnish: -- 1/2 cup powdered sugar, for rolling
   
   
  To make oat flour, whiz instant or rolled oats in your blender until they
  reach a flourlike consistency.
  Measure 1 cup of oat flour and set aside. In a mixing bowl, mash beans and
  banana with a fork to the consistency of refried beans.
  Stir in spices, salt, and sugar and mix well.
  Using an electric mixer, beat in oat flour.
  Add 1/4 cup of instant oats, stirring to combine and set batter aside to
  rest.
  Preheat oven to 350F.
  Grease a cookie sheet or line with parchment paper and set aside.
  Pick off walnut-sized portions of batter and roll into balls, stopping to
  wash hands periodically so the batter doesn't stick.
  Bake for 10 to 12 minutes, until firm and the bottoms are slightly golden.
  Let cool for a few minutes, then spritz lightly with oil spray and roll
  balls in powdered sugar.
   
  Makes 10 cookies
   
  Per serving (1 cookie): 90 cals (12% fat cals); 1.2g fat; 17g carbs; 3.9g
  fiber; 2.6g sugars; 3.8g protein.
   
  AuthorNote: I've borrowed the texture and shape from my husband's favorite
  cookies - Mexican wedding cookies, and added chai flavoring to these
  delicious gluten-free teats! Any white bean such as navy, butter, or
  cannellini beans may be used here (drain, but do not rinse!).
