                            German Sandwich Spread

    1                cup  canned white beans -- drained and rinsed
    1                     red bell pepper -- seeded and sliced
    1           teaspoon  chili powder
    1           teaspoon  onion flakes
    3        Tablespoons  nutritional yeast -- to 4 tablespoons
                          smoked paprika -- to taste
                          cayenne pepper -- to taste
       1/4           cup  cooked potato -- chopped or mashed (optional)
   
  Combine beans, bell pepper, chili powder, onion flakes, 3 Tablespoons
  nutritional yeast, a pinch of salt, a few dashes of smoked paprika, potato
  (if desired), and as much cayenne as you want, in a blender or food
  processor and whiz until smooth and creamy, stopping to scrape sides as
  necessary until you reach a thick, hummus-like consistency.
   
  Taste, adjusting more nutritional yeast or salt, if desired. Smear on
  rustic bread or crackers.
   
  Makes 1 cup; 4 one-quarter cup servings
   
  Per serving: Cals 80 (7% fat cals); Total Fat 0.6g; Carbs 15g; Fiber 6.3g;
  Sugars 1.5g; Protein 6.8g.
   
  Chef's Note: For a thicker spread, add 1/4 cup cooked potato. (I recommend
  mashing or chopping it, not adding it whole to your food processor or
  blender.
   
  Add 1 Tablespoon ketchup, if you'd like a tomato version.
   
  AuthorNote: A wonderful Herbie put me up when I was in Hamburg. After a
  late night of festivities (read: beer drinking), I woke up the next
  morning to a beautiful breakfast spread. What intrigued me the most was
  this little can sitting next to the fresh bread. I was scoping it out when
  my host told me it was a sandwich spread. I was a little skeptical about a
  spread that went on bread and lived in a can... and then I tried it. I
  liked it so much that I made my host take me to a store where I proceeded
  to buy six more cans. I still dream about those spreads in Germany, but
  this at-home version is pretty close.
