  Slow Cooker Wild Mushroom and Blue Cheese Bread Pudding w Sausage - 17g carbs; 1g fiber

    8             ounces  Italian flatbread -- (focaccia), cut into 1-inch pieces (about 5 cups)
    1 1/2           cups  assorted chopped fresh wild mushrooms -- such as chanterelle, morel, and/or stemmed shiitake
    4             ounces  smoked andouille sausage -- or other smoked sausage, chopped
       1/2           cup  chopped onion -- (1 medium)
       1/2           cup  crumbled blue cheese -- (2 ounces)
    4                     eggs -- lightly beaten, or 1 cup refrigerated or frozen egg product,thawed
    2               cups  half-and-half -- light cream, or milk
    1           teaspoon  dried thyme -- crushed
       1/2      teaspoon  dried rosemary -- crushed
       1/2      teaspoon  ground black pepper
  
  Line a 3 1/2- or 4-quart slow cooker with a disposable slow cooker liner.
  In a large bowl toss together focaccia, mushrooms, sausage, onion, and
  blue cheese. Transfer focaccia mixture to the prepared cooker. In a medium
  bowl combine eggs, half-and-half, thyme, rosemary, and pepper. Pour over
  mixture in cooker.
  
  Cover and cook on low-heat setting for 5 to 5 1/2 hours. Turn off cooker.
  Let stand, covered, for 15 to 30 minutes before serving. Using the liner,
  lift bread pudding out of cooker and place on a cutting board. Carefully
  remove and discard liner. Slice bread pudding.
